If you are like us, you are always looking for a healthy recipe that is easy to make, tastes good, and is packed with good health! One that is versatile and makes you feel good about yourself.  Well, this recipe for Chia Seed Power Pudding fits the bill in all ways.  The first time you try it, you may think it was a little strange…but after the next bite you will mostly likely be addicted!

This nutrient dense and energy sustaining recipe is packed with potassium, protein, sodium, fiber, magnesium, manganese, calcium, phosphorus, omega-3’s, and antioxidants.  This is our monthly movie night featured healthy recipe!

Chia Seed Power Pudding

Ingredients:

  • 1 cup chia seeds
  • 2 cups blueberries
  • 1 large ripe banana
  • 1 cup coconut milk (regular or light)
  • 1 cup almond milk
  • 1 cup plain Greek yogurt
  • 1 heaping Tbsp honey
  • 1 tsp vanilla extract
  • Dash of salt

Instructions:

Pour the chia seeds and blueberries into a serving bowl. Place the banana, coconut milk, almond milk, yogurt, honey, vanilla, and salt in a blender and blend until smooth. Pour this mixture over the chia seeds and berries. Stir everything together until well mixed. Place the bowl in the fridge overnight to allow the chia seeds to gelatinize and the mixture to set. Bon appetit!

Also, think about adding cooked rice to increase the complex carbs in this recipe.  Then it would be Chia Rice Pudding!
