Monthly movie night was a smash last night…there were many laughs, lots of recovery, and tons of quinoa!  As one of our members said…this is like the athletes version of the show “Cheers” where everybody knows your name and you’re always glad you came. We think we should start calling it “Movie Night Madness!”
People watched while wearing the NormaTec compression, sitting in the sauna, and moving between contrast tubs.  The addition of Planes, Trains, and Automobiles made for some hilariously productive social time at Recharge!  Stay tuned for next month’s movie night madness!
As promised here is the recipe that was featured last night…and there was not a bite left over at the end of the evening!  This healthy dish is also gluten-free and vegan, so it is perfect for everybody…and makes a good, healthy stuffing recipe for the upcoming holidays!  

Squash, Cranberry, and Mint Quinoa



2 cups quinoa

3 Bay leaves

1/8 cup olive oil

1 inch piece of fresh ginger, chopped

1 lb butternut squash, diced

1 small sweet onion, chopped

1 cup dried apricots, diced

1 cup dried cranberries

1/2 cup fresh parsley, chopped

1 cup fresh mint, chopped

1 lemon

Drizzle of honey

Salt and Pepper to taste

Optional: 1/4 cup of Hemp Seeds and/or Chopped Pecans


  1. Boil four cups water with bay leaves, salt, and dash of olive oil. Add quinoa and return to a boil.
  2. Reduce heat, cover, and simmer about 20 minutes, until the quinoa absorbs water. Remove from heat, remove bay leaves, and set aside in large bowl.
  3. Meanwhile, add half of the olive oil into a frying pan and bring to medium heat. Sauté the squash for five minutes, then add the onions, ginger, and salt & pepper.  Cook until slightly browned.
  4. Add squash to the bowl with the quinoa. Drizzle on a small amount of olive oil and honey. Stir in the apricots, cranberries, parsley, and mint.  Add hemp seeds and/or pecans if desired. Grate in one full lemon peel and squeeze some lemon juice over dish to taste. Season with salt and pepper.
  5. Mix and enjoy!  🙂
